Keto Toad in the Hole
This playful Keto breakfast recipe is a take on "Toad in the Hole" traditionally made with eggs and toast. It's eggs, bacon, and fun all in one!
- 1 8oz package THE BIG MOO Bakin' Bacon
- 2 eggs
- Salt and pepper to taste
- Using a 2-inch circle cut out, punch a hole in the center of the block of cheese. Remove the center and set aside.
- To a large skillet over medium heat, add THE BIG MOO with the centers cut out. (Cook the centers alongside if desired) Cook for 4-5 minutes on each side. Once the cheese is warmed through and has a deep golden brown color, crack the eggs into the center. Cover with a lid and cook the eggs to your desired doneness.
- Once the eggs are cooked, remove from the pan and season to taste with salt and pepper. Serve immediately with avocado and tomato salad.
