Grilled Baked Cheese with Mango Habanero Salsa

Ingredients

  • 1 6oz package of The Big Moo - Hoppin' Jalapeño
  • 2 ripe mangoes, diced
  • 1 small red onion, diced
  • 2 habanero chiles, minced
  • 1/2 cup fresh cilantro, chopped
  • juice and zest of 2 limes
  • salt

Directions

  1. Heat your grill to medium heat. While the grill is preheating, slice and chop all your ingredients.
  2. Slice The Big Moo into strips or bite sized pieces. Once the grill has preheated, place the cheese directly on the grill. Grill 2–3 minutes per side, until the cheese is golden, crisp, and heated through.
  3. To assemble the salsa, combine mangos, red onion, chilies, cilantro, the juice & zest of 2 limes in a bowl. Stir to combine, and add salt to taste.
  4. Once the cheese has cooked, arrange it on a serving platter and spoon the salsa over and around it.
  5. Serve immediately while the cheese is still warm, and enjoy!
