Bakin' Bacon Egg Muffins

Ingredients

  • 1 6oz package of The Big Moo - Bakin' Bacon
  • 1/2 large onion, chopped
  • 1 cup spinach, chopped
  • 12 large eggs
  • 1 tsp salt
  • 1 tsp pepper
  • Cooking spray

Directions

  1. Preheat the oven to 350°F.
  2. Spray cooking spray in a muffin pan and set aside.
  3. Chop The Big Moo into small pieces, about 1/4 inch.
  4. Chop onion and spinach.
  5. In a large bowl, whisk together eggs until frothy.
  6. Add onion, spinach, and The Big Moo to the egg mixture.
  7. Ladle egg mixture into muffin pan. Be careful not to overfill the muffin cups. Cook for 15-20 minutes.
  8. Remove from oven and let rest for 5 minutes. Serve immediately and enjoy!
