
Bakin' Bacon Egg Muffins
Ingredients
- 1 6oz package of The Big Moo - Bakin' Bacon
- 1/2 large onion, chopped
- 1 cup spinach, chopped
- 12 large eggs
- 1 tsp salt
- 1 tsp pepper
- Cooking spray
Directions
- Preheat the oven to 350°F.
- Spray cooking spray in a muffin pan and set aside.
- Chop The Big Moo into small pieces, about 1/4 inch.
- Chop onion and spinach.
- In a large bowl, whisk together eggs until frothy.
- Add onion, spinach, and The Big Moo to the egg mixture.
- Ladle egg mixture into muffin pan. Be careful not to overfill the muffin cups. Cook for 15-20 minutes.
- Remove from oven and let rest for 5 minutes. Serve immediately and enjoy!
