Cranberry & Balsamic Baked Cheese Bruschetta

Ingredients

  • 1 6oz package of The Big Moo - Harvest Cranberry
  • 2 tbsp butter, melted
  • 2 tbsp olive oil
  • 1 french baguette, sliced into ¾ inch slices
  • cranberry sauce
  • Balsamic glaze
  • Rosemary sprigs

Directions

  1. Preheat the oven to 425°F.
  2. Slice baguette, brush with olive oil, and bake for 5-10 minutes until golden and crisp.
  3. While the baguette slices are baking, slice The Big Moo into 8 equal pieces. Then slice those pieces in half length wise. Cook the cheese according to package instructions, about 6-7 minutes, flipping occasionally.
  4. To assemble, layer one piece of toasted baguette with a slice of The Big Moo. Top with cranberry sauce, drizzle with balsamic glaze, and top with a sprig of rosemary.
  5. Serve immediately and enjoy!
