The Big Moo Grilled Veggie Skillet
This Keto grilled veggie skillet is an easy, 20 minute vegetarian dinner when you are craving something light but satisfying.
Serves 2
INGREDIENTS
- 1 8oz package of THE BIG MOO Roasted Garlic
- 1 Zucchini
- 6-8 mini bell peppers
- 1 tablespoon Olive Oil
- Salt and pepper to taste
DIRECTIONS
- Heat grill or indoor grill pan over medium-high heat. While the grill is heating, wash and split the zucchini lengthwise and cut into 1-inch chunks. Split the mini bell peppers in half lengthwise and remove the seeds and stems. Add the vegetables to a bowl and toss the vegetables in the olive oil and season with salt and pepper.
- Add THE BIG MOO and grill according to package instructions. After 5 minutes, add the vegetables to the grill and let cook for 5 minutes per side. Avoid flipping often, we want grill marks!
- Transfer THE BIG MOO and vegetables to a platter and enjoy!
