Summer Salad with Baked Cheese Croutons
How to Make Our Summer Salad with Baked Cheese Croutons
Salad Ingredients:
- 1 block of The Big Moo - Roasted Garlic, cubed
- 2 ears of corn, husked and cleaned
- 1 cup of cherry tomatoes, quartered
- 1/4 of a red onion, diced
- 1 cup of red cabbage, chopped
- 1 bell pepper, chopped
Dressing Ingredients:
- The juice of 1 lemon
- 1/4 cup olive oil
- 1 tsp salt
- 1/2 tsp pepper
Cooking Instructions:
- Dice The Big Moo into small cubes.
- Toast The Big Moo in a skillet on medium heat for 6-7 minutes, flipping occasionally so all sides are toasted.
- While The Big Moo is cooking, chop your vegetables into bite sized pieces.
- For the dressing, combine the juice of 1 lemon, olive oil, salt, and pepper.
- Once The Big Moo has finished cooking, combine all the ingredients and toss to combine.
- Serve immediately and enjoy!
