How to Make Our Summer Salad with Baked Cheese Croutons

Salad Ingredients:

  • 1 block of The Big Moo - Roasted Garlic, cubed
  • 2 ears of corn, husked and cleaned
  • 1 cup of cherry tomatoes, quartered
  • 1/4 of a red onion, diced
  • 1 cup of red cabbage, chopped
  • 1 bell pepper, chopped

Dressing Ingredients:

  • The juice of 1 lemon
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp pepper

Cooking Instructions:

  • Dice The Big Moo into small cubes.
  • Toast The Big Moo in a skillet on medium heat for 6-7 minutes, flipping occasionally so all sides are toasted.
  • While The Big Moo is cooking, chop your vegetables into bite sized pieces.
  • For the dressing, combine the juice of 1 lemon, olive oil, salt, and pepper.
  • Once The Big Moo has finished cooking, combine all the ingredients and toss to combine.
  • Serve immediately and enjoy!
