How to make MOO-velous Afternoon Tea Snacks

Bacon, Scallion, and Baked Cheese Mini Quiche

Ingredients:

  • 1 Block of The Big Moo - Bakin' Bacon
  • Bacon, cooked & crumbled
  • Green onions, diced
  • 2 pie crusts
  • 3 eggs
  • 1/2 cup cream
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Chives, optional for topping

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut The Big Moo into 1/2-inch cubes.
  3. Dice the green onions.
  4. Cook the bacon according to package instructions, then cool and crumble.
  5. In a bowl, whisk together the eggs, cream, salt, and pepper.
  6. Spray a muffin tin with cooking spray.
  7. Cut circles from the pie crusts and press them into the muffin tin.
  8. Once crusts are ready, place a pinch of bacon, scallions, and a few Big Moo pieces into each pie crust.
  9. Fill each crust with the egg mixture.
