Today, we're mixing these Wisconsin legends to whip up a keto-friendly appetizer that'll have your taste buds polka dancing – Brat and Baked Cheese Bites!

What is baked cheese?

Baked cheese, also known as Juustoleipä, Juusto, or bread cheese, is a Finnish delicacy that found its way into the hearts of Wisconsinites and many others around the world! This cheese is made to be heated up and devoured.

Whether you're baking it, grilling it, frying it, or giving it a sizzle in a skillet, baked cheese gets crispy on the outside while staying gooey and warm on the inside. Enjoy it however you like – as a main for dinner, a tasty appetizer, a sidekick to your main dish, or even as a sweet treat!

How to make our keto-friendly brat and cheese bites

Ingredients:

Make it your own! Try adding your favorite vegetables or using different types of bratwurstsInstead of mustard, try serving the bites with a beer cheese, tangy barbecue sauce, creamy ranch dressing, or a homemade spicy aioli.

Cooking Instructions

Grill Brats and Cheese:

Preheat your grill to medium heat. Place the brats and whole blocks of The Big Moo - Roasted Garlic Baked Cheese directly on the grill. Grill the brats for about 15-18 minutes, turning occasionally, until they are cooked through and have grill marks. Grill the cheese blocks for about 7-8 minutes, or until they are slightly melted and have grill marks. 

Slice and Cut:

Remove the grilled brats from the grill and let them cool slightly. Then, slice them into rounds of your desired thickness. Similarly, cut The Big Moo blocks into 1-inch squares. We suggest using a pizza cutter for slicing the cheese when it is hot. 

Assemble Skewers:

Thread the brat slices and baked cheese squares onto toothpicks, alternating between each ingredient until all are used up. 

Serve:

Arrange the assembled skewers on a serving platter. Optionally, serve with mustard and soft pretzel bites on the side.
