Cheese & Veggie Keto Grain Bowl
Ingredients:
Grain Bowl:
- ½ 6 oz block of The Big Moo Oh-So Original Baked Cheese cut into cubes
- 1 cup of cooked quinoa or rice
- ½ cup cherry tomatoes
- ½ cup spinach
- 1 avocado
- 3 sweet peppers
- ¼ cup diced red onion
- *optional micro-greens for garnish

Lemon Olive Oil Vinaigrette:
- The juice of 1 lemon
- 2 ½ tbsp olive oil
- 1 tablespoon red wine vinnegar
- 1 tablespoon honey
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp Italian seasoning
Cooking Instructions:
- Prepare the vinaigrette by whisking all ingredients together in a bowl. Adjust to taste and set aside to allow flavors to mingle.
- Cook rice or quinoa according to package instructions.
- Cut vegetables to desired size. We cut the cherry tomatoes into halves, the peppers and avocados into slices, and diced the red onions.
- Pan fry The Big Moo Oh-So Original Baked Cheese cubes on medium heat for 6-8 minutes.
- While The Big Moo is cooking, prepare your bowl! Top your rice or quinoa with the chopped vegetables and vinaigrette dressing.
- Immediately after cooking, top your bowl with the warm Big Moo baked cheese cubes and enjoy.
