Cheese & Veggie Keto Grain Bowl

Ingredients:

Grain Bowl:

  • ½ 6 oz block of The Big Moo Oh-So Original Baked Cheese cut into cubes
  • 1 cup of cooked quinoa or rice
  • ½ cup cherry tomatoes
  • ½ cup spinach
  • 1 avocado
  • 3 sweet peppers
  • ¼ cup diced red onion
  • *optional micro-greens for garnish

Lemon Olive Oil Vinaigrette:

  • The juice of 1 lemon
  • ½ tbsp olive oil
  • 1 tablespoon red wine vinnegar
  • 1 tablespoon honey
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning

Cooking Instructions:

  1. Prepare the vinaigrette by whisking all ingredients together in a bowl. Adjust to taste and set aside to allow flavors to mingle.
  2. Cook rice or quinoa according to package instructions.
  3. Cut vegetables to desired size. We cut the cherry tomatoes into halves, the peppers and avocados into slices, and diced the red onions.
  4. Pan fry The Big Moo Oh-So Original Baked Cheese cubes on medium heat for 6-8 minutes.
  5. While The Big Moo is cooking, prepare your bowl! Top your rice or quinoa with the chopped vegetables and vinaigrette dressing.
  6. Immediately after cooking, top your bowl with the warm Big Moo baked cheese cubes and enjoy.
