Baked Cheese Tacos

Ingredients:

  • 2 8oz package The Big Moo - Hoppin' Jalape ño
  • 6 small flour tortillas
  • 1 bag coleslaw mix
  • ½ cup mayonnaise
  • 2 tablespoons white sugar
  • 1 ½ tablespoons lemon juice
  • 1 tablespoon vinegar
  • ½ teaspoon ground black pepper
  • ¼ teaspoon salt
  • 1 jalapeño, sliced thinly
  • Lime (optional) 

    Cooking Instructions:

    1. Slice The Big Moo into ½ inch strips and prepare according to package directions.
    2. While the cheese warms, make the coleslaw dressing. In a small bowl, whisk together mayo, sugar, lemon, vinegar, black pepper, and salt.
    3. Toss the coleslaw with the dressing and thinly slice the jalapeño. Wrap the tortillas in foil and warm in a  toaster oven for a few minutes.
    4. To assemble the tacos, fill the warm tortillas coleslaw, strips of The Big Moo and a few slices of jalapeño.
    5. Finish with lime if desired.
