The Big Moo Grilled Veggie Skillet

This Keto grilled veggie skillet is an easy, 20 minute vegetarian dinner when you are craving something light but satisfying. 

Serves 2

INGREDIENTS

    • 1 8oz package of THE BIG MOO Roasted Garlic
    • 1 Zucchini
    • 6-8 mini bell peppers
    • 1 tablespoon Olive Oil
    • Salt and pepper to taste

DIRECTIONS

      1. Heat grill or indoor grill pan over medium-high heat. While the grill is heating, wash and split the zucchini lengthwise and cut into 1-inch chunks. Split the mini bell peppers in half lengthwise and remove the seeds and stems. Add the vegetables to a bowl and toss the vegetables in the olive oil and season with salt and pepper.
      2. Add THE BIG MOO and grill according to package instructions. After 5 minutes, add the vegetables to the grill and let cook for 5 minutes per side. Avoid flipping often, we want grill marks!
      3. Transfer THE BIG MOO and vegetables to a platter and enjoy!

*Note: This recipe can be made using a cast-iron skillet
